Grilled Chicken Salad with Romaine & Cherry Tomatoes

Ingredients
  

For the Seasoned Chicken:
  • - 2 large boneless skinless chicken breasts (pounded to even thickness)
  • - 1 tbsp extra virgin olive oil
  • - 1/2 tsp garlic powder
  • - 1/2 tsp paprika for color and warmth
  • - 1/2 tsp Italian seasoning or dried oregano
  • - Salt and freshly cracked black pepper to taste
For the Creamy Mediterranean Caesar Dressing:
  • - 1/2 cup plain Greek yogurt
  • - 2 tbsp extra virgin olive oil
  • - 1 tbsp fresh lemon juice
  • - 1 tsp Dijon mustard
  • - 1 clove garlic finely minced or grated
  • - 2 tbsp finely grated Parmesan cheese
  • - 1/2 tsp caper brine or anchovy paste optional
  • - Salt and freshly cracked black pepper to taste
For the Salad Assembly:
  • - 2 large heads romaine lettuce washed, thoroughly dried, and chopped
  • - 1 cup cherry tomatoes halved
  • - 1/4 cup Parmesan cheese shaved or finely shredded
  • - Freshly cracked black pepper to taste

Method
 

Season the Chicken:
  1. Pat chicken breasts completely dry with paper towels. Drizzle both sides with extra virgin olive oil, then season evenly with garlic powder, paprika, Italian seasoning, salt, and black pepper.
Grill the Chicken:
  1. Heat a grill pan or outdoor grill over medium-high heat. Place chicken on the grill and cook for 5 to 6 minutes per side until the internal temperature reaches 165°F (74°C). Transfer chicken to a cutting board and let rest for 5 minutes before slicing into thick strips.
Make the Dressing:
  1. In a small bowl, whisk together the plain Greek yogurt, extra virgin olive oil, lemon juice, Dijon mustard, minced garlic, grated parmesan, salt, and pepper until smooth and creamy.
Toss the Greens:
  1. In a large bowl, combine the chopped romaine lettuce and two-thirds of the Greek yogurt Caesar dressing. Toss until leaves are thoroughly coated.
Assemble and Serve:
  1. Transfer dressed romaine to a serving bowl. Scatter halved cherry tomatoes across the top, fan warm sliced chicken down the center, and finish with shaved parmesan cheese and freshly cracked black pepper.

Notes

- Ensure the romaine lettuce is thoroughly dried using a salad spinner before tossing with dressing to prevent dilution.
- Let the grilled chicken rest for 5 minutes before slicing to lock in juicy moisture.
