Honey Garlic Roasted Carrots

Tender, glossy, and perfectly caramelized whole carrots glazed in extra virgin olive oil, butter, raw honey, and garlic. Garnished with toasted sesame seeds and fresh parsley.

Ingredients
  

  • - 2 lbs whole carrots peeled, ends trimmed, halved lengthwise if thick
  • - 3 tbsp Extra Virgin Olive Oil
  • - 1 tbsp salted butter or additional EVOO for dairy-free
  • - 3 tbsp raw honey
  • - 4 cloves garlic finely minced
  • - 1/2 tsp sea salt
  • - 1/4 tsp cracked black pepper
  • - 1/4 tsp smoked paprika
  • - 1 tbsp toasted sesame seeds for garnish
  • - 2 tbsp fresh flat-leaf parsley finely chopped, for garnish

Method
 

Prep the Oven and Carrots:
  1. Preheat oven to 425°F (220°C). Line a large rimmed baking sheet with aluminum foil or parchment paper and spray lightly with cooking oil spray. Halve thick carrots lengthwise so all pieces are uniform.
Make the Honey-Garlic Base:
  1. In a medium skillet, warm 1 tbsp butter and 3 tbsp extra virgin olive oil over medium heat. Add 4 minced garlic cloves and sauté for 30 seconds until fragrant. Add 3 tbsp honey, 1/2 tsp salt, 1/4 tsp black pepper, and 1/4 tsp smoked paprika. Whisk for 1 minute until smooth and bubbling.
Coat and Initial Roast:
  1. Toss carrots in the warm skillet to coat completely. Using tongs, lay carrots in a single layer on the prepared baking sheet (keep leftover glaze in skillet). Roast for 20 minutes at 425°F (220°C).
Apply Glaze & Finish Caramelization:
  1. Remove baking sheet from oven. Warm the remaining glaze in the skillet for 1 minute, then pour over the roasted carrots, tossing to recoat evenly. Return to oven for 5 to 7 minutes until sticky, tender, and blistered at the edges. (Optional: Broil for 45 seconds for extra char).
Garnish and Serve:
  1. Transfer to a serving platter, pour remaining pan juices over top, and garnish generously with toasted sesame seeds and fresh flat-leaf parsley. Serve warm.

Notes

- Do not add all the honey at step 1 on ultra-high heat without basting, as honey burns quickly above 350°F. The two-step method keeps the garlic sweet and non-bitter.
- For a completely vegan alternative, swap butter for additional EVOO and replace honey with pure maple syrup.
