Prep the Oven and Carrots:
- Preheat oven to 425°F (220°C). Line a large rimmed baking sheet with aluminum foil or parchment paper and spray lightly with cooking oil spray. Halve thick carrots lengthwise so all pieces are uniform.
Make the Honey-Garlic Base:
- In a medium skillet, warm 1 tbsp butter and 3 tbsp extra virgin olive oil over medium heat. Add 4 minced garlic cloves and sauté for 30 seconds until fragrant. Add 3 tbsp honey, 1/2 tsp salt, 1/4 tsp black pepper, and 1/4 tsp smoked paprika. Whisk for 1 minute until smooth and bubbling.
Coat and Initial Roast:
- Toss carrots in the warm skillet to coat completely. Using tongs, lay carrots in a single layer on the prepared baking sheet (keep leftover glaze in skillet). Roast for 20 minutes at 425°F (220°C).
Apply Glaze & Finish Caramelization:
- Remove baking sheet from oven. Warm the remaining glaze in the skillet for 1 minute, then pour over the roasted carrots, tossing to recoat evenly. Return to oven for 5 to 7 minutes until sticky, tender, and blistered at the edges. (Optional: Broil for 45 seconds for extra char).
Garnish and Serve:
- Transfer to a serving platter, pour remaining pan juices over top, and garnish generously with toasted sesame seeds and fresh flat-leaf parsley. Serve warm.
Notes
- Do not add all the honey at step 1 on ultra-high heat without basting, as honey burns quickly above 350°F. The two-step method keeps the garlic sweet and non-bitter.
