Honey-Glazed Roasted Veggie Medley

This festive Honey-Glazed Roasted Veggie Medley combines sweet, caramelized root vegetables and tender greens with crunchy pecans and tart dried cranberries. Made entirely with heart-healthy olive oil.

Ingredients
  

  • 3 large carrots peeled and cut into 2-inch chunks
  • 3 medium Yukon Gold potatoes scrubbed and cubed
  • ½ lb Brussels sprouts trimmed and halved
  • 1 small head broccoli cut into bite-sized florets
  • 3 tbsp Extra Virgin Olive Oil divided: 2 tbsp for roots, 1 tbsp for greens
  • ¼ cup raw honey
  • ½ cup pecan halves raw or lightly toasted
  • cup dried cranberries
  • ½ tsp dried thyme or dried rosemary
  • Fine sea salt and freshly cracked black pepper to taste

Method
 

Prep the Oven:
  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
Roast Root Veggies:
  1. Toss the potato cubes and carrot chunks with 2 tablespoons of olive oil, salt, and pepper. Spread them in a single layer on the baking sheet. Roast for 15 minutes.
Add the Greens:
  1. Whisk the remaining 1 tablespoon of olive oil with the Brussels sprouts and broccoli florets. Pull the baking sheet out, flip the potatoes and carrots, and add the greens to the tray. Return to the oven for another 15 minutes.
Prepare the Glaze:
  1. While the veggies roast, whisk together the honey, dried herbs, and a small pinch of salt in a small bowl.
Glaze and Crisp:
  1. Remove the sheet pan from the oven. Scatter the pecan halves and dried cranberries evenly over the vegetables. Drizzle the entire honey mixture across the top and toss gently to coat.
Final Bake:
  1. Return everything to the oven for 5 more minutes until the glaze bubbles, the pecans smell fragrant, and the vegetables are fork-tender with caramelized edges. Transfer to a glass serving dish immediately.

Notes

  • Pro Tip (Keep the Broccoli Vibrant): If you prefer your broccoli extra crunchy and bright green, add it only during the final 10 minutes of baking so it does not overcook.
