Ingredients
  

Chicken
  • 1 lb Chicken Breast cubed
  • 3 tbsp Honey
  • 2 tbsp Lime Juice
  • 1 tbsp Extra Virgin Olive Oil
  • 2 cloves Garlic minced
  • ½ tsp Cumin & Smoked Paprika
Rice & Avocado
  • 2 cups Cooked Basmati Rice
  • 1 tsp Lime Zest
  • 2 tbsp Cilantro chopped
  • 2 Ripe Avocados diced
  • Salt to taste

Method
 

  1. Marinate: Mix honey, lime, oil, garlic, and spices. Toss with chicken. Marinate for 20 mins.
  2. Sear: Cook chicken in a hot skillet for 6-8 mins until glazed and golden.
  3. Season Rice: Mix rice with lime zest, 1 tbsp lime juice, and cilantro.
  4. Prep Avocado: Toss diced avocado with lime juice and salt.
  5. Stack: Use a ring mold to layer rice, then avocado, then chicken. Press each layer firmly.
  6. Serve: Garnish with lime wedges and serve immediately.
