Ingredients

  • 1.5 lbs White Fish Cod, Halibut, or Sea Bass, cut into blocks
  • 2 tbsp Extra Virgin Olive Oil
  • 2 tbsp Raw Honey
  • 1 tbsp Fresh Lime Juice
  • 1 clove Garlic minced
  • 1 tsp Red Pepper Flakes
  • A pinch of Smoked Paprika
  • Fresh chives and toasted sesame seeds for garnish
  • Sea salt to taste

Method

  1. Prepare: Pat the fish blocks completely dry and season with salt.
  2. Sear: Heat oil in a skillet over medium-high heat. Sear fish for 3-4 minutes on one side until golden.
  3. Glaze: Whisk honey, lime, garlic, paprika, and pepper flakes.
  4. Finish: Flip fish, add glaze, and simmer for 2 minutes until sticky and glossy.
  5. Serve: Garnish with chives and sesame seeds.

Notes

  • The Secret to the Sear: Always pat the fish bone-dry with paper towels before cooking. Any surface moisture will cause the fish to steam instead of developing that iconic caramelized crust.
  • Fish Selection: While Cod is the most popular, Halibut offers a firmer "block" texture that mimics the photography perfectly.
  • Serving Tip: To keep it strictly Mediterranean, serve over a bed of quinoa or alongside a crisp Greek salad to balance the sweetness of the honey.
