Honey Phyllo Cups with Whipped Feta

Ingredients
  

For the Crunchy Phyllo Shells:
  • - 6 to 8 sheets phyllo pastry thawed
  • - 1/3 cup extra virgin olive oil or melted unsalted butter
  • - 1/2 cup walnuts or pistachios very finely chopped
  • - 1/2 teaspoon ground cinnamon
For the Whipped Feta Filling:
  • - 8 oz 225g Greek feta cheese, block in brine, drained
  • - 1/2 cup whole milk plain Greek yogurt
  • - 1 tablespoon extra virgin olive oil
  • - 1/2 teaspoon lemon zest
  • - 1/4 teaspoon garlic powder
  • - 1 teaspoon fresh thyme leaves finely chopped
For the Garnish & Drizzle:
  • - 1/3 cup wildflower honey slightly warmed
  • - 1/4 cup pistachios roughly chopped

Method
 

Prepare the Oven and Pan:
  1. Preheat oven to 375°F (190°C). Lightly grease a standard 12-cup muffin tin with olive oil or cooking spray.
Mix Shell Seasoning:
  1. In a small bowl, combine the finely chopped walnuts (or pistachios) with the ground cinnamon.
Layer the Phyllo Dough:
  1. Lay one sheet of phyllo pastry on a clean, dry surface. Lightly brush with olive oil and sprinkle a thin, even layer of the nut-cinnamon mixture across it. Place a second phyllo sheet directly on top, brush with oil, and sprinkle with nuts. Repeat until you have stacked 4 layers.
Cut and Form Shells:
  1. Using a sharp knife or pizza cutter, cut the layered dough stack into 12 equal squares. Gently press each square down into the muffin tin cups, letting the corners flare outward naturally.
Bake the Shells:
  1. Bake for 12 to 15 minutes until the pastry edges are deep golden brown and crisp. Remove from oven and cool completely in the tin.
Blend the Whipped Feta:
  1. In a food processor, combine drained feta cheese, Greek yogurt, 1 tablespoon olive oil, lemon zest, and garlic powder. Process for 2 to 3 minutes, scraping down sides as needed, until pureed into a velvet-smooth white cream. Fold in fresh thyme.
Pipe the Filling:
  1. Transfer whipped feta into a piping bag fitted with a wide star tip.
Assemble and Garnish:
  1. Carefully lift cooled phyllo cups out of the tin and arrange on a serving platter. Pipe a generous star mound of cold whipped feta into each shell. Top liberally with crushed pistachios.
Drizzle and Serve:
  1. Drizzle warm honey over the top just before serving so it cascades down the sides. Serve immediately.

Notes

- Anti-Soggy Storage Tip: Store baked empty shells at room temperature for up to 2 days. Keep whipped feta in a sealed piping bag in the fridge for up to 3 days. Assemble just before guests arrive.
- Shortcut Option: Use 2 boxes of store-bought pre-baked mini phyllo cups. Refresh them on a baking sheet at 350°F for 3 minutes before filling.
- Hot Honey Twist: Add 1/2 teaspoon red pepper flakes to warm honey for sweet heat.
