Hot Honey Peach Crostini Recipe

Ingredients
  

For the Crostini Base:
  • - 1 French baguette or rustic sourdough, sliced into ½-inch pieces
  • - 2 tbsp extra-virgin olive oil
  • - 1 pinch flaky sea salt
For the Creamy Whipped Base:
  • - 8 oz Brie cheese rind trimmed off OR 8 oz Ricotta/Feta
  • - 4 oz softened cream cheese or plain Greek yogurt if using feta
  • - 2 tbsp heavy cream
  • - 1 tsp fresh lemon juice
For the Fruit & Crunch Toppings:
  • - 2 ripe peaches sliced into thin wedges
  • - 1 cup fresh blackberries
  • - ⅓ cup shelled pistachios finely chopped
  • - 4-5 fresh thyme sprigs leaves stripped
For the Hot Honey Drizzle:
  • - ⅓ cup honey
  • - ½ tsp crushed red pepper flakes
  • - ½ tsp apple cider vinegar

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Arrange baguette slices on a baking sheet, brush both sides with extra-virgin olive oil, and bake for 8–10 minutes until golden and crisp.
  3. Place peach slices on a parchment-lined baking tray, spray lightly with olive oil, and roast at 400°F for 12–15 minutes until tender and caramelized.
  4. In a food processor, blend trimmed brie (or ricotta/feta), cream cheese/Greek yogurt, heavy cream, and lemon juice for 2–3 minutes until smooth and airy.
  5. In a small saucepan over low heat, gently warm honey, red pepper flakes, and apple cider vinegar for 2–3 minutes. Remove from heat to cool.
  6. Assemble by spreading a thick layer of whipped cheese over cooled crostini. Top with 2–3 roasted peach wedges and 1–2 blackberries.
  7. Garnish heavily with chopped pistachios, fresh thyme leaves, flaky sea salt, and a generous drizzle of warm hot honey before serving.

Notes

- To prevent sogginess, assemble crostini right before serving.
- For a lighter option, blend feta with Greek yogurt for a tangy, probiotic-rich base.
- Store leftovers separately in airtight containers in the refrigerator for up to 2 days.
