Method
- Preheat oven to 400°F (200°C). Lightly brush a large baking dish with 1/2 tbsp extra virgin olive oil.
- Slice salmon fillets horizontally (butterfly style) to create wide, thin sheets. Pat completely dry with paper towels and season lightly with salt, pepper, and lemon juice.
- In a bowl, combine ricotta cheese, crumbled feta cheese, chopped spinach, chopped fresh basil, lemon zest, minced garlic, and Parmesan cheese. Mix until uniform.
- Spread filling evenly over each fillet, leaving a 1/4-inch border around all edges. Roll tightly starting from the thick end.
- Wrap a thin lemon strip around each roll and secure seam-side down in the baking dish using toothpicks.
- Arrange trimmed asparagus spears around the salmon rolls. Drizzle remaining 1 tbsp olive oil over everything and top with coarsely cracked black pepper.
- Bake for 12–15 minutes until salmon is flaky and opaque. Remove toothpicks, garnish with whole fresh basil leaves, and serve hot.
