Ingredients
  

For the Cod:
  • 1 lb cod fillets cut into 1.5-inch cubes
  • 2 tbsp extra virgin olive oil
  • 1 tbsp unsalted butter
  • Salt black pepper, and lemon zest (to taste)
For the Dill Cream Sauce:
  • 1 cup heavy cream
  • 2 tbsp unsalted butter
  • 1 whole lemon juiced
  • 3 tbsp fresh dill finely chopped
  • 1 tsp garlic powder optional

Method
 

  1. Prep: Pat cod cubes dry with paper towels. Season with salt, pepper, and zest.
  2. Sear: Heat oil and 1 tbsp butter in a skillet over medium-high. Sear cod for 3-4 mins per side until golden. Remove fish.
  3. Sauce: Reduce heat to medium. Pour in heavy cream, scraping the pan.
  4. Thicken: Add 2 tbsp butter, lemon juice, and dill. Simmer for 5 mins until thickened.
  5. Finish: Return cod to pan to coat. Serve immediately.

Notes

For a lighter version, you can substitute the heavy cream with half-and-half, though the sauce will be slightly thinner. Always use fresh dill for the best aromatic experience.
