- Prep: Pat cod cubes dry with paper towels. Season with salt, pepper, and zest.
- Sear: Heat oil and 1 tbsp butter in a skillet over medium-high. Sear cod for 3-4 mins per side until golden. Remove fish.
- Sauce: Reduce heat to medium. Pour in heavy cream, scraping the pan.
- Thicken: Add 2 tbsp butter, lemon juice, and dill. Simmer for 5 mins until thickened.
- Finish: Return cod to pan to coat. Serve immediately.
Notes
For a lighter version, you can substitute the heavy cream with half-and-half, though the sauce will be slightly thinner. Always use fresh dill for the best aromatic experience.
