Ingredients

Ingredients (Sprouts)
  • 1 lb Brussels sprouts
  • 2 tbsp Olive oil
  • Salt
  • Pepper
  • Garlic powder
Ingredients (Cod/Sauce)
  • 4 Cod fillets
  • 2 tbsp Butter
  • 2 tbsp Olive oil
  • 4 cloves Garlic
  • 1 Lemon zested/juiced,
  • 1/2 cup Heavy cream
  • Paprika

Method

  1. Roast sprouts at 400°F (20 mins).
  2. Season/Sear cod in pan (3-4 mins per side).
  3. Sauté garlic in butter/cream/lemon.
  4. Serve sauce over fish and sprouts.

Notes

  • Pro Tip: If you want extra crispy sprouts, place the baking sheet in the oven while it preheats. Tossing the sprouts onto a hot pan jumpstarts the caramelization process.
  • Substitution: If cod is unavailable, halibut or sea bass work beautifully with this specific lemon-cream flavor profile.
  • Sauce Consistency: If the sauce becomes too thick, whisk in a tablespoon of pasta water or vegetable broth to reach your desired silkiness.
