Ingredients
  

Fish:
  • 4 –6 cod fillets approx. 1.5 lbs
Vegetables:
  • 1.5 cups cherry tomatoes
Sauce:
  • 4 tbsp unsalted butter melted,
  • 1 tbsp extra virgin olive oil
Aromatics:
  • 3 garlic cloves minced,
  • 1 tbsp lemon zest
Liquid:
  • 3 tbsp fresh lemon juice
Herbs:
  • 2 tbsp fresh dill
  • 1 tbsp parsley
  • 1 tsp thyme all chopped
Spices:
  • Salt
  • black pepper
  • ¼ tsp paprika

Method
 

  1. Prep: Preheat oven to 400°F (200°C).
  2. Whisk: Combine melted butter, olive oil, garlic, lemon juice/zest, herbs, and paprika in a bowl.
  3. Season: Pat cod dry. Season both sides with salt and pepper.
  4. Arrange: Place fillets in a 9x13 baking dish. Surround with cherry tomatoes and lemon slices.
  5. Coating: Pour the herb butter generously over the fish.
  6. Bake: Cook for 13–20 minutes until the internal temp is 145°F.
  7. Serve: Baste with pan juices, garnish with fresh dill, and enjoy!

  • Fish Variety: While cod is preferred, this herb butter works beautifully with halibut or haddock.
  • Internal Temp: Pull the fish at 140°F if you prefer a slightly more moist texture; the carry-over heat will bring it to the food-safe 145°F.
