Maple-Roasted Sweet Potatoes with Feta Cheese & Candied Pecans

A stunning Mediterranean side dish featuring caramelized maple-glazed sweet potatoes, crunchy toasted pecans, tart cranberries, and creamy crumbled feta cheese. Perfect for holiday dinners or healthy meal prep!

Ingredients
  

For the Sweet Potatoes:
  • - 3 lbs Sweet potatoes Jewel or Garnet, peeled and cut into 1-inch cubes
  • - 2 tbsp Extra virgin olive oil
  • - 2 tbsp Pure Grade A maple syrup
  • - 1 tsp Ground cinnamon
  • - 1 clove Garlic finely minced
  • - 1/2 tsp Sea salt
  • - 1/4 tsp Freshly cracked black pepper
For the Toppings & Garnish:
  • - 1/2 cup Authentic Greek feta cheese freshly crumbled
  • - 1/2 cup Dried cranberries or fresh pomegranate arils
  • - 1/2 cup Raw pecans roughly chopped
  • - 2-3 sprigs Fresh thyme leaves
  • - 2 tbsp Fresh flat-leaf parsley chopped
  • - 1 tsp Raw maple syrup or hot honey optional drizzle finish

Method
 

  1. Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. In a large bowl, whisk together extra virgin olive oil, maple syrup, minced garlic, ground cinnamon, sea salt, and black pepper.
  3. Add cubed sweet potatoes to the bowl and toss until evenly coated with the maple emulsion.
  4. Spread sweet potatoes onto the prepared baking sheet in a single layer with space between pieces.
  5. Roast for 20 minutes, then remove from oven and gently flip cubes with a spatula.
  6. Scatter chopped pecans and dried cranberries evenly over the sweet potatoes.
  7. Return to oven and roast for 7-10 minutes until sweet potatoes are tender with browned edges and pecans are fragrant and candied.
  8. Transfer warm mixture to a platter, top with crumbled feta cheese, fresh thyme, and parsley. Drizzle with optional hot honey or maple syrup before serving.

Notes

- Air Fryer Option: Cook seasoned potatoes at 390°F (200°C) for 12-15 minutes, shaking halfway. Add pecans/cranberries for final 3 minutes.
- Cheese Tip: Always crumble block feta packed in brine for best flavor and texture.
