- Set up coating station: Place flour and seasonings in bowl 1, beaten egg in bowl 2, and crushed pistachios in bowl 3.
- Coat: Dredge avocado wedges in flour, dip in egg, and press firmly into pistachios.
- Cook (Air Fryer): Arrange in a single layer at 375°F (190°C) for 8–10 mins. Spray with EVOO halfway through.
- Cook (Oven): Bake at 400°F (200°C) for 12–15 mins on parchment paper.
- Serve: Squeeze fresh lemon over the fries and serve with Tzatziki.
Notes
- The "Firm-Ripe" Rule: For the best results, use avocados that are just beginning to soften. If they are too ripe, they will turn into mash during the breading process.
- Nut Allergy Alternative: If you cannot use pistachios, swap them for a 50/50 mix of almond meal and sesame seeds to keep that Mediterranean flair.
- Reheating: To maintain the crispy avocado fries texture, always reheat in the air fryer or oven at 350°F for 3 minutes. Avoid the microwave at all costs!
