Ingredients
  

  • 2 cups Cooked chicken shredded (Rotisserie recommended)
  • 3 cups Fresh baby spinach chopped
  • 1 medium Red bell pepper diced
  • 1 cup Plain Greek yogurt
  • 1/4 cup Ricotta cheese
  • 1 tbsp Extra virgin olive oil
  • 3 cloves Garlic minced
  • 1 tsp Italian seasoning
  • 1/2 tsp Sea salt
  • 1/4 tsp Black pepper
  • 1/2 cup Feta cheese crumbled
  • 1.5 cups Mozzarella cheese shredded (divided)
  • 1/4 cup Parmesan cheese grated

Method
 

  1. Preheat: Set oven to 375°F (190°C) and grease a 9x13 baking dish.
  2. Mix Base: In a large bowl, whisk yogurt, ricotta, olive oil, garlic, and seasonings until smooth.
  3. Combine: Fold in chicken, spinach, red pepper, feta, and 1 cup of mozzarella.
  4. Assemble: Spread the mixture evenly into the baking dish.
  5. Top: Sprinkle the remaining 1/2 cup of mozzarella and the Parmesan over the top.
  6. Bake: Bake for 25–30 minutes until the top is golden and bubbly.
  7. Serve: Let rest for 5 minutes before slicing.

Notes

  • Spinach Tip: If using frozen spinach, ensure it is completely thawed and squeezed dry in a kitchen towel to prevent a watery casserole.
