Ingredients
  

  • 4 chicken breasts
  • 2 zucchinis
  • 1 pint cherry tomatoes
  • 1 red onion
  • 1 red bell pepper
  • 3 tbsp olive oil
  • 2 cloves garlic
  • 1 tsp oregano
  • 1 tsp basil
  • 1/2 cup feta fresh basil.

Method
 

  1. Preheat oven to 400°F.
  2. Season chicken with oil and half the herbs.
  3. Toss veggies with remaining oil/herbs.
  4. Layer veggies and top with chicken.
  5. Bake 25-30 mins.
  6. Top with cheese in final 5 mins.
