Mediterranean Goat Cheese Burger

Ingredients
  

For the Patties:
  • 1.5 lbs Grass-fed ground beef or turkey,
  • 1 tsp dried oregano
  • 1 tsp salt ½ tsp black pepper.
For the Aioli:
  • ½ cup olive oil mayo
  • 1 clove garlic minced,
  • zest of 1 lemon
  • 1 tbsp lemon juice.
The Toppings:
  • 4 oz Goat cheese log
  • 1 large red onion sliced,
  • 1 tbsp olive oil
  • 4 slices cooked bacon optional,
  • 2 cups baby arugula.
The Buns:
  • 4 Whole grain brioche buns.

Method
 

  1. Caramelize: Sauté onions in olive oil over medium heat for 15 mins until jammy.
  2. Mix Aioli: Combine mayo, garlic, lemon zest, and juice. Set aside.
  3. Form: Shape meat into 4 patties. Season the exterior with salt, pepper, and oregano.
  4. Cook: Grill or pan-sear for 4-5 mins per side. Crumble goat cheese on top during the last minute.
  5. Assemble: Toast buns. Spread aioli on both sides. Layer arugula, patty, bacon, and onions. Enjoy!

Notes

For a gluten-free version, use a lettuce wrap or a gluten-free bun.
  • To make it dairy-free, substitute goat cheese with a dollop of thick hummus.
  • Allowing the aioli to chill for at least 20 minutes is crucial to let the garlic and lemon flavors meld.
