  • 4 Boneless skinless chicken breasts
  • 1 lb Baby potatoes halved
  • 1 cup Cherry tomatoes
  • 1 Red onion chopped into large pieces
  • 1 can 14oz Artichoke hearts, drained and halved
  • 3 tbsp Extra virgin olive oil
  • 2 cloves Garlic minced
  • 1 tsp each: Dried oregano thyme, paprika
  • Salt and pepper to taste
  • 1 Lemon sliced into rounds
  • Fresh parsley for garnish

Method
 

  1. Season: In a large bowl, toss chicken and vegetables with olive oil, garlic, and spices.
  2. Assemble: Divide the mixture onto 4 large foil sheets. Top each with 2 lemon slices.
  3. Seal: Fold the foil edges together tightly.
  4. Cook: Grill for 15-20 mins or bake at 400°F for 25-30 mins.
  5. Serve: Garnish with fresh herbs and enjoy!
