Ingredients
  

For the Ground Chicken:
  • 1 lb 450g Ground Chicken
  • 1-2 tbsp Extra Virgin Olive Oil
  • 1 small Red Onion diced
  • 3 cloves Garlic minced
  • 1 tbsp Dried Oregano
  • 1 tsp Paprika
  • 1 tsp Dried Dill
  • ½ tsp Cumin
  • Pinch of Chili Flakes
  • Salt & Pepper to taste
  • 1 tbsp Fresh Lemon Juice
For the Hot Honey Feta Cream:
  • 1 cup Feta Cheese crumbled
  • ½ cup Plain Greek Yogurt
  • 2 tbsp Hot Honey
  • 1 tsp Lemon Zest + 1 tbsp Juice
For the Assembly:
  • 2 cups Cooked Quinoa or Rice
  • 1 cup Cherry Tomatoes halved
  • 1 large Cucumber sliced
  • ½ Red Onion thinly sliced
  • Fresh Parsley and Dill for garnish

Method
 

  1. Prepare Base: Cook your chosen grain. Toss with a drizzle of olive oil and a pinch of salt.
  2. Sauté: In a large skillet, heat olive oil over medium-high heat. Add onion and garlic; sauté for 3 minutes until fragrant.
  3. Brown Chicken: Add ground chicken. Cook until browned, breaking it up with a spatula.
  4. Season: Stir in oregano, paprika, dill, cumin, chili flakes, salt, and pepper. Cook for 2 more minutes. Stir in lemon juice and remove from heat.
  5. Whip Feta: Blend feta, yogurt, hot honey, and lemon in a food processor until smooth.
  6. Assemble: Divide grains into 4 bowls. Top with chicken, cucumbers, tomatoes, and onions. Drizzle generously with feta cream and garnish with fresh herbs.

Notes

  • For Meal Prep: Store the hot chicken and grains together, but keep the fresh vegetables and Hot Honey Feta Cream in separate containers to maintain crispness.
  • Spice Level: If you prefer less heat, reduce the chili flakes in the chicken and use a mild honey instead of hot honey in the feta cream.
