Mediterranean Lamb and Brown Rice Stuffed Bell Peppers

Sweet bell peppers filled with seasoned ground lamb, whole-grain brown rice, fire-roasted tomatoes, and herbs, finished with a bubbly mozzarella and feta crust.

Ingredients
  

  • 4-6 large bell peppers green, orange, or yellow
  • 1 tbsp Extra Virgin Olive Oil
  • 1 lb lean ground lamb
  • 1 medium yellow onion finely diced
  • 3 cloves garlic minced
  • 1 cup pre-cooked brown rice cooked in broth
  • 1 can 14.5 oz fire-roasted diced tomatoes
  • 2 tbsp tomato paste
  • 1 tsp dried oregano
  • ½ tsp ground cumin
  • ¼ tsp dried mint
  • Salt and black pepper to taste
  • ¾ cup shredded mozzarella cheese divided
  • ¼ cup crumbled Greek feta cheese
  • 2 tbsp fresh flat-leaf parsley finely chopped (for garnish)

Method
 

Prep Oven & Peppers:
  1. Preheat oven to 375°F (190°C). Cut tops off bell peppers, clear out seeds and membranes, and stand them upright in a deep baking dish.
Brown Meat:
  1. Heat extra virgin olive oil in a skillet over medium heat. Add diced onion and ground lamb; cook 5-6 minutes until browned. Drain excess fat, then add garlic and cook 1 minute.
Simmer Sauce:
  1. Stir in tomato paste, fire-roasted tomatoes, oregano, cumin, dried mint, salt, and pepper. Simmer for 5 minutes until liquid reduces.
Mix Filling:
  1. Remove from heat. Stir in cooked brown rice and ¼ cup of the mozzarella-feta mixture.
Stuff & Bake:
  1. Spoon filling into bell peppers. Add ½ cup water to bottom of dish, cover tightly with foil, and bake for 35 minutes.
Melt Cheese:
  1. Uncover, top with remaining cheese, and bake uncovered for 10-12 minutes until bubbly and golden brown. Garnish with parsley before serving.

Notes

  • Ensure brown rice is completely pre-cooked before adding to the filling.
  • For lower fat, substitute ground turkey for ground lamb.
