Method
Cook Meat:
- Heat olive oil in a large skillet over medium-high heat. Add yellow onion and garlic; cook 2–3 minutes until translucent. Add ground lamb, breaking it up as it cooks. Stir in cumin, smoked paprika, oregano, salt, and black pepper. Cook 6–8 minutes until fully browned. Remove from heat.
Make Sauce:
- In a small bowl, mash Greek yogurt, crumbled feta, minced garlic, and lemon juice together with a fork until textured and spreadable.
Toast Flatbreads:
- Heat a dry skillet over medium-high heat. Lightly brush flatbreads with olive oil and toast 1–2 minutes per side until warm and charred around the edges.
Assemble:
- Spread a thick layer of garlic-feta sauce over each warm flatbread. Top with shredded lettuce, warm spiced lamb, diced cucumber, quartered cherry tomatoes, red onion, crumbled feta, fresh parsley, and a dusting of sumac or chili flakes. Serve immediately!
