Mediterranean Lamb and Feta Flatbread

A 30-minute Mediterranean flatbread topped with fragrant spiced ground lamb, cool garlic-feta Greek yogurt spread, crisp vegetables, and fresh herbs.

Ingredients
  

For the Spiced Meat Base:
  • 1 lb 450g ground lamb (or ground beef)
  • 1 tbsp extra virgin olive oil
  • 1 small yellow onion finely diced
  • 2 cloves garlic minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • ½ tsp sea salt
  • ¼ tsp black pepper
For the Creamy Feta Garlic Base Sauce:
  • 1 cup plain Greek yogurt
  • ½ cup authentic feta cheese crumbled
  • 1 clove garlic minced
  • 1 tsp fresh lemon juice
For the Toppings & Flatbread:
  • 4 whole grain flatbreads or naan rounds
  • 1 cup romaine lettuce finely shredded
  • ½ English cucumber diced
  • 1 cup cherry tomatoes quartered
  • ½ red onion thinly sliced
  • ¼ cup fresh flat-leaf parsley finely chopped
  • 1 tsp ground sumac or chili flakes for garnish

Method
 

Cook Meat:
  1. Heat olive oil in a large skillet over medium-high heat. Add yellow onion and garlic; cook 2–3 minutes until translucent. Add ground lamb, breaking it up as it cooks. Stir in cumin, smoked paprika, oregano, salt, and black pepper. Cook 6–8 minutes until fully browned. Remove from heat.
Make Sauce:
  1. In a small bowl, mash Greek yogurt, crumbled feta, minced garlic, and lemon juice together with a fork until textured and spreadable.
Toast Flatbreads:
  1. Heat a dry skillet over medium-high heat. Lightly brush flatbreads with olive oil and toast 1–2 minutes per side until warm and charred around the edges.
Assemble:
  1. Spread a thick layer of garlic-feta sauce over each warm flatbread. Top with shredded lettuce, warm spiced lamb, diced cucumber, quartered cherry tomatoes, red onion, crumbled feta, fresh parsley, and a dusting of sumac or chili flakes. Serve immediately!

Notes

  • Storage Note: Keep meat, sauce, and fresh toppings separate in the fridge for up to 4 days. Assemble right before serving.
  • Dairy-Free Alternative: Use a dairy-free yogurt alternative combined with plant-based crumbled feta.
