Mediterranean Loaded Cabbage Steaks Recipe

Crispy-edged, caramelized roasted cabbage steaks loaded with melty mozzarella, tangy feta, cherry tomatoes, black olives, red onion, and fresh herbs. A gorgeous low-carb, Mediterranean-style side or main dish!

Ingredients
  

For the Cabbage Base & Marinade:
  • - 1 large head green cabbage washed, dried, sliced into 1-inch thick rounds
  • - 3 tbsp extra-virgin olive oil
  • - 2 cloves garlic minced
  • - 1 tsp dried oregano or Italian seasoning
  • - Salt and freshly ground black pepper to taste
For the Mediterranean Toppings:
  • - 1 cup shredded mozzarella cheese
  • - 1/2 cup feta cheese crumbled
  • - 1/2 cup cherry tomatoes diced or halved
  • - 1/4 cup black olives sliced
  • - 2 tbsp red onion finely minced
  • - 2 tbsp fresh dill or flat-leaf parsley finely chopped
  • - Fresh lemon wedges for serving

Method
 

Prep Oven & Cabbage:
  1. Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper. Slice cabbage vertically into 1-inch thick steaks, keeping the core intact.
Season & First Bake:
  1. Place steaks on the sheet. Whisk olive oil, minced garlic, oregano, salt, and pepper in a bowl. Brush generously onto both sides of cabbage steaks. Roast for 20-25 minutes until tender and caramelized at edges.
Load Toppings:
  1. Remove baking sheet from oven. Layer mozzarella cheese onto each steak, followed by crumbled feta, red onion, cherry tomatoes, and black olives.
Final Melt & Garnish:
  1. Return to oven and bake for 5-8 minutes until mozzarella is melted and bubbly. Garnish immediately with fresh dill, parsley, and a squeeze of fresh lemon juice before serving hot.

Notes

- Keep core intact to ensure cabbage slices do not break apart during baking.
- Reheat in an oven or air fryer at 350°F to retain edge crispiness.
