Mediterranean Oven-Baked Cabbage Burgers

A vibrant, low-carb alternative to traditional burgers using thick-roasted cabbage "steaks" as a base, topped with a spiced Mediterranean meat patty and melty mozzarella.

Ingredients
  

For the Base & Topping:
  • 1 large head of Green Cabbage sliced into 1-inch rounds
  • 1 cup shredded Mozzarella or Monterey Jack divided
  • ½ cup Tomato sauce or thick marinara
  • Freshly chopped Parsley or Dill for garnish
  • 2 tbsp Extra Virgin Olive Oil
  • Salt & Black Pepper to taste
The Mediterranean Meat Patty:
  • 1 lb Ground Beef or Lamb
  • 1 small Red Onion grated
  • 2 cloves Garlic minced
  • 1 tsp Dried Oregano
  • 1 tsp Ground Cumin
  • ½ tsp Ground Coriander
  • 1 pinch Cinnamon
  • ¼ cup chopped fresh Mint or Parsley
Optional: Red chili flakes

Method
 

  1. Preheat & Prep: Heat oven to 400°F (200°C). Arrange cabbage rounds on a parchment-lined tray. Brush with oil, salt, and pepper.
  2. Initial Roast: Bake cabbage for 10 minutes until slightly softened.
  3. Meat Mix: In a bowl, combine ground meat, onion, garlic, spices, fresh mint, and half of the cheese.
  4. Assemble: Remove cabbage from oven. Spread 1 tbsp tomato sauce on each round. Form meat into patties and place on top.
  5. Final Bake: Bake for 20–25 minutes until meat is cooked through (internal temp 160°F).
  6. Cheese Melt: Top with remaining cheese; bake 3–5 minutes more until golden.
  7. Serve: Garnish with fresh herbs and enjoy!

Notes

Ensure the cabbage is sliced exactly 1-inch thick to maintain structural integrity during roasting.
