  • 1 sheet frozen puff pastry thawed
  • ½ cup feta cheese crumbled
  • ½ cup fresh spinach wilted, squeezed dry, and chopped
  • cup roasted red peppers finely chopped
  • ¼ cup Kalamata olives sliced
  • ¼ cup marinated artichoke hearts finely chopped
  • ¼ cup hummus or softened cream cheese
  • 1 clove garlic minced
  • ½ tsp dried oregano
  • 1 egg beaten, for egg wash
  • 1 tsp extra virgin olive oil for brushing
  • Fresh parsley for garnish

Method
 

  1. Prep: Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll Pastry: Dust a surface with flour and roll the thawed puff pastry into a rectangle.
  3. Base Layer: Mix hummus (or cream cheese) with garlic and oregano. Spread evenly, leaving a ½-inch border at the top.
  4. Fill: Scatter spinach, feta, olives, red peppers, and artichoke hearts across the dough.
  5. Roll & Chill: Roll tightly from the long edge. Place the log in the freezer for 15 minutes to firm up.
  6. Slice: Use a sharp knife to cut into ¾-inch rounds.
  7. Bake: Place on the tray, brush with egg wash and olive oil. Bake for 15-18 minutes until deep golden brown.
  8. Serve: Garnish with fresh parsley and serve warm.
