Method
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Score the cut flesh of halved eggplants in a diagonal crosshatch diamond pattern, taking care not to pierce through the outer skin.
- Brush cut sides with 2 tbsp extra virgin olive oil, season with salt and black pepper, and place cut-side down on the baking sheet.
- Roast for 25 to 30 minutes until flesh is completely tender and skins are wrinkled.
- While eggplants roast, heat 1 tbsp olive oil in a skillet over medium heat. Sauté diced red onion for 3 to 4 minutes until translucent.
- Add minced garlic and dried oregano; sauté for 1 minute until fragrant.
- Add quartered cherry tomatoes and cook for 2 minutes until slightly softened.
- Turn off heat and stir in cooked tri-color quinoa and optional fresh parsley. Season filling with salt and black pepper to taste.
- Remove roasted eggplants from oven, flip cut-side up, and gently press center flesh down with a spoon to form boat cavities.
- Divide quinoa filling evenly among eggplant boats, mounding it high.
- Top stuffed boats with crumbled feta cheese and return to oven for 3 to 5 minutes until cheese is warm and softened.
- Garnish with fresh basil ribbons, a drizzle of extra virgin olive oil, and a squeeze of fresh lemon juice before serving.

- To make vegan, replace feta cheese with a plant-based dairy-free feta alternative or nutritional yeast.
