Mediterranean Roasted Chickpea Gyros

A fresh, protein-packed vegetarian Greek gyro filled with tender-crisp roasted spiced chickpeas, cool homemade garlic-dill tzatziki, crunchy produce, and crumbled feta wrapped in warm whole wheat pita.

Ingredients
  

- Chickpeas:
  • 1 can 15 oz chickpeas, rinsed and thoroughly towel-dried
- Oil:
  • 1 tbsp Extra Virgin Olive Oil
- Spice Mix:
  • 1 tsp smoked paprika 1 tsp ground cumin, ½ tsp garlic powder, ¼ tsp cayenne pepper, ½ tsp sea salt, ¼ tsp freshly cracked black pepper
- Tzatziki:
  • 1 cup plain Greek yogurt ½ large English cucumber (grated & squeezed dry), 1 clove garlic (minced), 1 tbsp fresh dill (chopped), ½ tbsp fresh lemon juice, pinch of salt
- Pita & Fillings:
  • 4 whole wheat pita breads 1 cup sliced cucumber, 1 cup halved cherry tomatoes, ½ cup thinly sliced red onion, 1 cup fresh shredded greens, ⅓ cup crumbled sheep’s milk feta cheese

Method
 

Preheat & Dry:
  1. Preheat oven to 400°F (200°C). Roll rinsed chickpeas in paper towels until completely dry to ensure optimal crispness.
Season:
  1. Toss dried chickpeas with extra virgin olive oil, smoked paprika, cumin, garlic powder, cayenne, salt, and pepper until fully coated.
Roast:
  1. Spread on a parchment-lined baking sheet in a single layer. Bake for 20–22 minutes, shaking the tray halfway, until golden and tender-crisp.
Mix Tzatziki:
  1. Combine Greek yogurt, squeezed cucumber, minced garlic, fresh dill, lemon juice, and salt in a bowl. Refrigerate until assembly.
Warm Flatbread:
  1. Warm whole wheat pitas in a dry skillet over medium heat for 1 minute per side until soft and flexible.
Assemble:
  1. Layer tzatziki down the center of each warm pita. Top with fresh greens, cucumbers, tomatoes, red onions, roasted chickpeas, extra tzatziki drizzle, and crumbled feta. Serve warm immediately.

Notes

For maximum crispiness in less time, air-fry seasoned chickpeas at 390°F for 12 minutes. Keep ingredients stored in separate containers for non-soggy weekday meal prep.
