Method
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- Toss thick zucchini half-moons and dried chickpeas with 3 tbsp extra virgin olive oil, dried oregano, garlic powder, salt, and black pepper.
- Spread in a single layer and roast for 20-25 minutes, tossing halfway through, until zucchini is golden brown and chickpeas are crispy.
- Cook orzo pasta in salted boiling water until al dente. Drain well and transfer to a large mixing bowl.
- In a small jar or bowl, whisk extra virgin olive oil, fresh lemon juice, minced garlic, Dijon mustard, salt, and pepper until emulsified.
- Drizzle half of the vinaigrette over warm orzo pasta and toss to coat.
- Add roasted zucchini, crispy chickpeas, Kalamata olives, crumbled feta cheese, and chopped fresh parsley to the bowl.
- Pour remaining lemon vinaigrette over salad, toss gently, and serve warm or chilled.
