Ingredients

  • 1 can 16 oz refrigerated Whole-Wheat flaky biscuits
  • ¾ cup cooked shrimp finely chopped
  • ¾ cup lump crab meat
  • ½ cup plain Greek yogurt
  • 2 tbsp extra-virgin olive oil divided
  • 1 tbsp lemon juice + ½ tsp zest
  • 1 cup shredded low-moisture Mozzarella or Feta
  • 1 tsp garlic powder
  • 1 tsp Old Bay seasoning
  • 2 tbsp fresh parsley chopped

Method

  1. Preheat: Set oven to 375°F (190°C). Line a tray with parchment.
  2. Mix: Combine seafood, yogurt, 1 tbsp oil, lemon, spices, half the parsley, and half the cheese.
  3. Assemble: Flatten 8 biscuit rounds to 4 inches. Spoon filling onto the center.
  4. Seal: Fold over and pinch edges or top with another round.
  5. Brush: Brush tops with remaining olive oil.
  6. Bake: Bake for 15-18 mins until golden brown.
  7. Serve: Garnish with remaining parsley.

Notes

  • Seafood Prep: Always pat your shrimp and crab dry with a paper towel before mixing to prevent a soggy biscuit.
  • Sodium Control: If you are watching your salt intake, look for "Low Sodium" Old Bay seasoning or use smoked paprika and celery seed.
  • Texture Tip: For an extra crispy bottom, preheat your baking sheet in the oven for 5 minutes before placing the biscuits on it.
