Ingredients
  

Zesty Garlic-Paprika Shrimp:
  • 1 lb large shrimp peeled, deveined, patted completely dry
  • 1 tbsp extra virgin olive oil
  • 3 cloves garlic finely minced
  • 1/2 tsp smoked paprika
  • 1/2 tsp dried oregano
  • 1 tbsp fresh lemon juice
  • 1/2 tsp sea salt
  • 1/4 tsp freshly cracked black pepper
Sauce Base:
  • 1 cup Greek yogurt tzatziki sauce
Greek Salad Topping:
  • 1 cup English cucumber finely diced
  • 1 cup Roma tomatoes finely diced
  • 1/4 cup red onion finely minced
  • 1/2 cup sheep or goat milk feta cheese crumbled
  • 2 tbsp fresh parsley finely chopped
Flatbread Base:
  • 4 pocketless Greek pitas or thick flatbreads
  • 1 tbsp extra virgin olive oil for brushing

Method
 

  1. In a medium bowl, combine shrimp, 1 tablespoon olive oil, minced garlic, smoked paprika, dried oregano, salt, black pepper, and lemon juice. Toss to coat and marinate for 10–15 minutes at room temperature.
  2. In a separate small bowl, toss together diced cucumber, Roma tomatoes, and red onion. Set aside.
  3. Heat a cast-iron skillet or grill pan over medium-high heat. Add marinated shrimp in a single layer and sear for 2–3 minutes per side until pink, opaque, and lightly charred. Transfer to a warm plate.
  4. Wipe skillet clean, brush flatbreads lightly with olive oil, and warm for 1–2 minutes per side until soft and toasted.
  5. Spread 1/4 cup tzatziki sauce over each warm flatbread. Top with seared shrimp, spoon the diced vegetable mixture over top, and finish with crumbled feta cheese and chopped fresh parsley. Serve hot with lemon wedges.

Notes

  • For a dairy-free variation, replace tzatziki with garlic tahini sauce or rich hummus, and substitute plant-based feta.
  • To make gluten-free, use high-quality gluten-free flatbread bases or teff-based wraps.
