Mediterranean Stanley Tucci’s Lemon Shallot Chicken with Fresh Herbs

Tender, pan-seared chicken cutlets served under a velvety mushroom garlic lemon sauce and garnished with fresh flat-leaf parsley.

Ingredients
  

For the Chicken Cutlets:
  • - 4 large boneless skinless chicken breasts (sliced horizontally into 8 thin cutlets)
  • - 1/4 cup all-purpose flour or 1:1 gluten-free flour
  • - 1 tsp garlic powder
  • - 1/2 tsp smoked paprika
  • - 1/2 tsp sea salt
  • - 1/4 tsp freshly cracked black pepper
  • - 1 tbsp extra virgin olive oil
  • - 2 tbsp unsalted butter
For the Creamy Lemon Shallot Mushroom Sauce:
  • - 8 oz cremini baby bella mushrooms, sliced
  • - 2 tbsp unsalted butter
  • - 2 large shallots finely minced
  • - 3 cloves garlic finely minced
  • - 3/4 cup low-sodium chicken broth
  • - 3 tbsp freshly squeezed lemon juice
  • - 1 tsp fresh lemon zest
  • - 1/2 cup heavy cream or unsweetened cashew cream
  • - 1/3 cup Parmesan cheese finely grated
  • - 1/4 cup fresh flat-leaf Italian parsley finely chopped

Method
 

Prepare and Season Chicken:
  1. Slice chicken breasts in half horizontally to make thin cutlets. Pat dry with paper towels. In a shallow bowl, whisk flour, garlic powder, smoked paprika, salt, and black pepper. Dredge cutlets in seasoned flour, shaking off excess.
Sear Cutlets:
  1. Heat olive oil and 2 tbsp butter in a large skillet over medium-high heat. Arrange cutlets in a single layer and sear for 4 to 5 minutes per side until golden brown and cooked to an internal temperature of 165°F (74°C). Transfer chicken to a clean platter.
Sauté Mushrooms and Aromatics:
  1. Reduce heat to medium. Add remaining 2 tbsp butter and sliced cremini mushrooms to the skillet. Sauté undisturbed for 2-3 minutes until browned, then stir. Add minced shallots and garlic; sauté for 2 minutes until fragrant and soft.
Deglaze and Build Sauce:
  1. Pour chicken broth and fresh lemon juice into the pan. Scrape up all caramelized browned bits from the bottom with a wooden spoon. Simmer for 3 minutes until liquid reduces by half. Turn heat down to low and stir in heavy cream, lemon zest, and grated Parmesan. Simmer gently for 2 to 3 minutes until sauce thickens into a silky coating.
Combine and Serve:
  1. Return seared chicken cutlets and accumulated juices to the pan. Spoon creamy mushroom sauce generously over the chicken to warm through for 1 minute. Transfer to a white platter, pour remaining sauce over top, and scatter chopped fresh parsley before serving.

Notes

- Keep stove heat on low when adding heavy cream and Parmesan to keep sauce smooth and emulsified.
- To make dairy-free, substitute unsweetened cashew cream and nutritional yeast for heavy cream and Parmesan.
