Ingredients
  

  • 1.5 lbs Chicken Thighs boneless, skinless, chopped into bite-sized pieces
  • 2 cups Fresh Pineapple cubed
  • 1 cup Brown Rice uncooked
  • 2 tbsp Extra Virgin Olive Oil
Glaze:
  • 1/2 cup Pineapple juice
  • 3 tbsp Honey
  • 3 tbsp Tamari
  • 1 tbsp Fresh ginger grated,
  • 3 cloves Garlic minced,
  • 1 tsp Dried oregano
  • 1 tbsp Cornstarch.
Garnish:
  • Green onions Fresh parsley.

Method
 

  1. Prepare Rice: Cook brown rice according to package instructions.
  2. Sear Chicken: Heat oil in a large skillet. Brown chicken pieces until cooked through (6-8 mins). Remove chicken.
  3. Char Pineapple: Add pineapple to the same pan. Sear for 3 mins until edges are charred.
  4. Make Sauce: Whisk glaze ingredients in a bowl. Pour into the skillet with pineapple.
  5. Thicken: Simmer sauce for 2 minutes until thick and glossy.
  6. Combine: Return chicken to the pan. Toss to coat. Serve over brown rice.

  • Caramelization Key: For maximum flavor, let the pineapple char undisturbed in the pan for 2–3 minutes to develop those smoky, sweet edges.
