Ingredients
  

  • For the Spinach Feta Turkey Patties
  • 500 g Ground turkey or chicken
  • 1 cup Fresh spinach very finely chopped
  • ½ cup Feta cheese crumbled
  • 2 cloves Garlic minced
  • 1 tsp Dried oregano
  • ½ tsp Ground cumin
  • ½ tsp Salt & cracked black pepper to taste
  • 1 tbsp Olive oil for pan-searing
  • For the Dill Yogurt Sauce & Cucumber Salad Base
  • 1 cup Plain Greek yogurt
  • 2 tbsp Fresh dill finely chopped
  • 1 tbsp Lemon juice
  • 4 cups Chopped Romaine lettuce or mixed greens
  • 1 cup English cucumber diced
  • 1 cup Cherry tomatoes halved
  • ¼ cup Red onion thinly sliced
  • ¼ cup Kalamata olives optional

Method
 

  1. Mix & Form the Patties
  2. In a large bowl, combine the ground turkey, finely chopped spinach, crumbled feta, minced garlic, oregano, cumin, salt, and pepper. Gently mix until just combined (don't overwork the meat or it gets tough). Form into 4 equal-sized patties.
  3. Make the Creamy Dill Yogurt
  4. In a small bowl, whisk together the Greek yogurt, fresh dill, and lemon juice. Add a pinch of salt to taste. Set aside in the fridge to let the flavors meld.
  5. Cook the Patties
  6. Heat 1 tbsp of olive oil in a skillet or non-stick pan over medium-high heat. Add the turkey patties and cook for 5–6 minutes per side until golden brown and cooked through (internal temperature of 165°F / 74°C).
  7. Assemble the Bowls
  8. Divide your chopped Romaine or mixed greens among 4 bowls. Top with diced cucumbers, cherry tomatoes, sliced red onions, and olives.
  9. Serve & Enjoy
  10. Place a warm spinach-feta turkey patty on top of each bowl. Top with a generous dollop of the dill yogurt sauce!

Notes

  • Pro Spinach Tip: If your fresh spinach has a lot of moisture, squeeze it out in a paper towel before mixing it into the meat so the patties don't get soggy.
  •  Meal Prep: Store the cooked patties separately from the fresh salad and yogurt. Warm the patties for 60 seconds before assembling your fresh lunch!
