Mediterranean Zero-Point Strawberry Ice Cream

Ingredients
  

  • 2 cups Unsweetened frozen strawberries
  • 1 Ripe banana sliced and frozen
  • 1/2 cup Fat-free Greek yogurt
  • 1 tsp Vanilla extract
  • 1/8 tsp Monk fruit powder adjust to taste
  • Fresh berries for garnish

Method
 

  1. Prepare: Ensure your banana is fully frozen. Slicing it before freezing makes blending much easier.
  2. Blend: Add the frozen strawberries, banana slices, Greek yogurt, vanilla, and monk fruit to a blender or food processor.
  3. Process: Blend on high until the mixture is smooth and resembles soft-serve ice cream. Scrape the sides as needed. If too thick, add 1 tbsp of water.
  4. Serve: For a soft-serve texture, serve immediately in chilled bowls.
  5. Freeze: For firm scoops, transfer to a container and freeze for 30–60 minutes. Garnish with fresh berries.

Notes

For a truly "Zero-Point" experience on certain weight loss plans, ensure the Greek yogurt is strictly fat-free and unsweetened. If the mixture is too hard after storing in the freezer, let it sit at room temperature for 10 minutes before scooping.
