Method
- Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper.
- Heat 1 tbsp of extra virgin olive oil in a skillet over medium-high heat. Add sliced cremini mushrooms, fresh thyme, salt, and black pepper. Sauté for 5 minutes until browned and tender. Remove from heat.
- Place flatbread on the prepared baking sheet. Brush remaining 1 tbsp olive oil and minced garlic evenly over the top crust.
- Distribute shredded mozzarella and crumbled goat cheese across the garlic-oil base.
- Arrange sautéed mushrooms and thinly sliced red onions evenly over the cheeses.
- Bake for 8 to 10 minutes until cheese is melted and bubbly and flatbread edges are golden brown.
- Remove from oven, immediately top with fresh baby arugula, sprinkle with grated Parmesan and cracked black pepper, slice, and serve immediately.
