Ingredients
  

  • 1 lb chicken thighs cubed
  • 1 tsp paprika ½ tsp sea salt, ½ tsp black pepper
  • 2 tbsp Extra Virgin Olive Oil
  • 2 tbsp honey
  • 4 cloves garlic minced
  • 1 tbsp lemon juice + ½ tsp dried oregano
  • 1 cup brown basmati rice rinsed
  • 2 cups low-sodium chicken broth

Method
 

  1. Season: Toss chicken with paprika, salt, and pepper.
  2. Sear: Brown chicken in olive oil over medium-high heat for 5-6 mins. Remove.
  3. Aromatics: In the same pan, sauté garlic, honey, lemon, and oregano for 1 min.
  4. Rice: Add rice and broth. Bring to a simmer.
  5. Cook: Cover and cook on low for 15-18 mins.
  6. Finish: Stir chicken back in, let sit for 5 mins covered. Garnish and serve.
