- Preheat your oven to 400°F (200°C). Lightly oil a large, rimmed metal baking sheet.
- In a large bowl or directly on the sheet pan, combine the prepared zucchini, yellow squash, bell peppers, red onion wedges, and whole cherry tomatoes.
- Drizzle with extra virgin olive oil, then add minced garlic, dried herbs, sea salt, and black pepper. Toss thoroughly to coat every piece evenly.
- Spread the vegetables into a single, un-crowded layer across the baking sheet. Use two baking sheets if necessary to prevent steaming.
- Roast for 25 to 30 minutes, tossing halfway through, until the edges are golden-brown and caramelized and the tomatoes are blistered.
- Remove from heat, sprinkle generously with fresh chopped parsley, and drizzle with fresh lemon juice or balsamic glaze if desired. Serve warm.
