Ingredients
  

  • - 2 medium zucchinis sliced into ½-inch half-moons
  • - 2 medium yellow squash sliced into ½-inch half-moons
  • - 2 large bell peppers 1 red, 1 yellow, cut into 1-inch chunks
  • - 1 large red onion cut into wedges
  • - 1 cup whole cherry or grape tomatoes
  • - 3 tbsp extra virgin olive oil
  • - 3 cloves garlic finely minced
  • - 1 tbsp Mediterranean dried herb blend oregano, basil, thyme
  • - 1 tsp sea salt
  • - ½ tsp freshly cracked black pepper
  • - ¼ cup fresh flat-leaf parsley finely chopped (for garnish)
  • - 1 tbsp fresh lemon juice or balsamic glaze optional finish

Method
 

  1. Preheat your oven to 400°F (200°C). Lightly oil a large, rimmed metal baking sheet.
  2. In a large bowl or directly on the sheet pan, combine the prepared zucchini, yellow squash, bell peppers, red onion wedges, and whole cherry tomatoes.
  3. Drizzle with extra virgin olive oil, then add minced garlic, dried herbs, sea salt, and black pepper. Toss thoroughly to coat every piece evenly.
  4. Spread the vegetables into a single, un-crowded layer across the baking sheet. Use two baking sheets if necessary to prevent steaming.
  5. Roast for 25 to 30 minutes, tossing halfway through, until the edges are golden-brown and caramelized and the tomatoes are blistered.
  6. Remove from heat, sprinkle generously with fresh chopped parsley, and drizzle with fresh lemon juice or balsamic glaze if desired. Serve warm.

Notes

- High heat (400°F/200°C) is essential to prevent soggy vegetables.
- If adding root vegetables like potatoes or carrots, pre-roast them for 15 minutes before adding summer squash and peppers.
- Store leftovers in glass containers for up to 5 days. Re-crisp in the air fryer or oven.
