  • 4 oz Gorgonzola Cheese softened
  • 2 tbsp Ricotta or Cream Cheese
  • 2 ripe but firm Pears Anjou or Bosc
  • 1/4 cup Walnuts chopped
  • 2 tbsp High-quality Honey
  • Fresh Thyme sprigs
  • Extra Virgin Olive Oil for brushing
  • Flaky Sea Salt & Black Pepper

Method
 

  1. Toast Walnuts: Heat a dry pan over medium. Toast chopped walnuts for 2-3 mins until fragrant.
  2. Prep Pears: Slice pears crosswise into thin rounds; remove seeds.
  3. Toast Bread: Brush bread with olive oil. Broil or pan-toast until golden brown.
  4. Cheese Base: Blend Gorgonzola and Ricotta until smooth.
  5. Assemble: Spread cheese on warm toast. Layer pear slices on top.
  6. Garnish: Top with walnuts, thyme, honey, salt, and pepper. Serve immediately.
