Ingredients
  

  • 4-5 Persian cucumbers sliced into rounds
  • 1/2 large red onion thinly sliced
  • 1/2 cup white wine vinegar
  • 2 tbsp extra virgin olive oil
  • 1 clove garlic minced
  • 1 tsp dried oregano
  • 1/2 tsp sea salt
  • 1/4 tsp cracked black pepper

Method
 

  1. In a large glass jar or bowl, combine the white wine vinegar, olive oil, minced garlic, oregano, salt, and pepper. Whisk until the salt is mostly dissolved.
  2. Add the sliced cucumbers and red onions to the mixture.
  3. Toss or shake (if using a jar) until all vegetables are thoroughly coated in the brine.
  4. Let the mixture sit at room temperature for 15 minutes, then move to the refrigerator.
  5. For best flavor, marinate for at least 30 minutes before serving.
