Pomegranate Swirl Ice Cream

A refreshing and creamy no-churn Mediterranean dessert featuring a tart pomegranate juice reduction and fresh arils.

Ingredients
  

  • 2 cups heavy whipping cream well-chilled
  • 1 can 14 oz sweetened condensed milk
  • 1 tsp vanilla extract
  • A pinch of salt
  • 1 cup pomegranate juice
  • 2 tbsp sugar
  • ½ cup fresh pomegranate arils

Method
 

  1. Syrup: Simmer juice and sugar in a pan for 10-12 mins until syrupy. Chill completely.
  2. Base: Whip cold heavy cream to soft peaks. Fold in condensed milk, vanilla, and salt.
  3. Assemble: Layer half the cream in a pan, drizzle syrup and arils. Repeat.
  4. Swirl: Use a knife to create a marbled pattern.
  5. Freeze: Cover and freeze for 8 hours. Serve with extra arils.

Notes

 Ensure the pomegranate syrup is completely cold before adding to the cream base to prevent melting.
