Ingredients
  

  • 4 medium beets peeled and sliced into ½-inch rounds
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • 2 tbsp honey
  • ¼ cup crumbled goat cheese
  • ½ cup dried cranberries
  • 2 tbsp toasted walnuts
  • Fresh thyme for garnish

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Toss beet rounds with olive oil, salt, and pepper.
  3. Arrange on a baking sheet (use parchment paper for easy cleanup).
  4. Roast for 25–30 minutes, flipping halfway through.
  5. Remove from oven and drizzle with honey while still warm.
  6. Top each round with goat cheese, cranberries, and walnuts.
  7. Garnish with fresh thyme and serve warm or at room temperature.

Notes

  • For the best visual appeal, use a mix of red and golden beets if available.
