Roasted Butternut Squash & Ricotta Lasagna

A healthy, savory Mediterranean-style lasagna featuring layers of roasted butternut squash, sweet potato, herb-whipped ricotta, feta, spinach, toasted walnuts, and fresh sage.

Ingredients
  

For the Vegetable Filling:
  • 3 cups butternut squash peeled and cubed
  • 2 medium sweet potatoes peeled and thinly sliced
  • 2 tbsp extra virgin olive oil
  • 2 cloves garlic minced
  • 1 tsp dried sage
  • ½ tsp dried thyme
  • ½ tsp salt
  • ¼ tsp black pepper
For the Cheese & Spinach Layer:
  • 1½ cups part-skim ricotta cheese
  • 1 cup Greek feta cheese crumbled
  • ½ cup mozzarella cheese shredded
  • 2 cups fresh baby spinach lightly wilted and squeezed dry
For Assembly & Garnish:
  • 9 to 12 lasagna noodles oven-ready or pre-boiled
  • ½ cup walnuts roughly chopped
  • 6 to 8 fresh sage leaves

Method
 

Roast the Vegetables:
  1. Preheat oven to 400°F (200°C). In a large bowl, toss cubed butternut squash and sliced sweet potatoes with olive oil, minced garlic, dried sage, thyme, salt, and black pepper. Spread evenly on a parchment-lined baking sheet and roast for 25–30 minutes until tender. Reduce oven temperature to 375°F (190°C).
Prepare Cheese & Spinach:
  1. Sauté spinach in a skillet with a splash of olive oil for 2 minutes until wilted. Squeeze out all excess moisture using a towel. In a bowl, mix ricotta, crumbled feta, and half of the mozzarella until creamy. Fold in the squeezed spinach.
Assemble Lasagna:
  1. Grease a 9×13-inch baking dish. Spread a thin layer of cheese mixture on the bottom. Add a layer of noodles, followed by half the cheese-spinach blend, half the roasted squash/sweet potatoes, and half the chopped walnuts. Repeat for a second layer.
Finish Top Layer:
  1. Top with the remaining noodles, thin cheese layer, reserved roasted squash cubes, remaining chopped walnuts, and fresh sage leaves.
Bake:
  1. Cover loosely with foil and bake at 375°F (190°C) for 25 minutes. Uncover and bake for an additional 15–20 minutes until golden brown and bubbly.
Rest & Serve:
  1. Let rest for 15 minutes before slicing into 8 neat squares.

Notes

  • Prevent Watery Lasagna: Ensure roasted squash is caramelized and spinach is thoroughly squeezed dry.
  • Make-Ahead Tip: Assemble up to 48 hours in advance, keep refrigerated, and bake when ready.
