- Preheat oven to 375°F (190°C). Generously spray 8 cups of a standard 12-cup muffin tin with extra virgin olive oil spray.
- Heat a skillet over medium-high heat. Add the ground turkey or chicken sausage, breaking it apart with a wooden spoon into small crumbles. Cook for 5 to 6 minutes until browned and cooked through. Drain any excess fat and set aside to cool slightly.
- In a large bowl, whisk together the eggs, milk, garlic powder, salt, and black pepper for 1 minute until fluffy and foamy.
- Divide cooked sausage crumbles, diced red bell peppers, and shredded cheddar cheese evenly among the 8 greased muffin cups.
- Pour the egg mixture into each cup, leaving a 1/4-inch space at the top. Stir each cup gently with a fork to distribute ingredients.
- Bake for 18 to 21 minutes until the egg muffins are golden brown around the edges and set in the center.
- Let cool in the pan for 5 minutes. Run a butter knife around the edges to release them, sprinkle with fresh parsley, and serve warm.

- To Freeze: Let cool completely, wrap individually in parchment paper, and store in a freezer bag for up to 3 months. Reheat in the microwave for 60 seconds.
