Ingredients

For the Shrimp:
  • - 1 lb 450g large shrimp, peeled and deveined
  • - 2 tsp paprika
  • - 1 tsp garlic powder
  • - 1 tsp onion powder
  • - ½ tsp chili powder or cayenne pepper
  • - ½ tsp sea salt
  • - ¼ tsp freshly cracked black pepper
  • - 2 tsp extra virgin olive oil
For the Base & Garnish:
  • - 2 to 3 large ripe avocados halved and pitted
  • - 2 tbsp fresh parsley or cilantro finely chopped
  • - Fresh lemon or lime wedges for serving
For the Greek Yogurt Citrus Drizzle:
  • - 3 tbsp extra virgin olive oil
  • - 2 tbsp fresh lemon juice
  • - 1 clove garlic minced
  • - 2 tbsp Greek yogurt

Method

Prep Shrimp:
  1. Pat the shrimp dry with paper towels. In a bowl, toss the shrimp with paprika, garlic powder, onion powder, chili powder, salt, and black pepper until evenly coated.
Sear Shrimp:
  1. Heat extra virgin olive oil in a skillet over medium-high heat. Add shrimp in a single layer and sear for 2-3 minutes per side until pink and opaque. Squeeze fresh citrus juice over the shrimp and remove from heat.
Make Dressing:
  1. In a small bowl, whisk together extra virgin olive oil, lemon juice, minced garlic, Greek yogurt, and chopped parsley until smooth and golden.
Prep Avocados:
  1. Cut avocados in half and remove pits. Slice a tiny flat sliver off the bottom skin of each half so they sit steady on the plate.
Assemble:
  1. Pile the warm spice-rubbed shrimp into the avocado halves, drizzle with the golden citrus sauce, garnish with chopped parsley, and serve with lime wedges.

Notes

- To keep avocados from browning if prepping ahead, lightly brush the cut flesh with fresh lemon juice.
- Ensure the skillet is hot before adding shrimp to achieve a golden spice crust.
