Slow Cooker Onion Butter Potatoes

Tender red potato wedges glazed in a savory caramelized onion and garlic sauce. Made with real extra virgin olive oil, sweet onions, and herbs for a whole-food Mediterranean slow cooker side dish!

Ingredients
  

  • 3 lbs baby red potatoes washed and cut into 1-inch wedges (skin-on)
  • 1/4 cup extra virgin olive oil
  • 1/4 cup unsalted butter melted
  • 1 large sweet yellow onion finely diced
  • 4 cloves garlic finely minced
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tbsp balsamic glaze
  • 1 tsp sea salt
  • 1/2 tsp cracked black pepper
  • 2 tbsp fresh Italian flat-leaf parsley finely chopped (for garnish)

Method
 

Prep Potatoes:
  1. Wash and dry 3 lbs of baby red potatoes. Cut them into 1-inch wedges, keeping the skins on for color and texture.
Make Sauce Blend:
  1. In a mixing bowl, whisk together the melted butter, extra virgin olive oil, finely diced sweet onion, minced garlic, onion powder, garlic powder, dried oregano, balsamic glaze, sea salt, and black pepper.
Combine in Slow Cooker:
  1. Place potato wedges into a 6-quart slow cooker. Pour the onion-butter blend over top. Toss thoroughly with a spatula to coat every wedge.
Cook:
  1. Cover with lid and cook on LOW for 3 to 4 hours (or HIGH for 2 hours) until potatoes are fork-tender.
Finish & Serve:
  1. Give the potatoes a final stir to coat them in the jammy onion glaze at the bottom of the pot. Transfer to a platter and sprinkle with fresh chopped parsley.

Notes

  • Oven Alternative: Roast on a lined sheet pan at 425°F (218°C) for 35–45 minutes, flipping halfway through.
  • Storage: Keep in an airtight container in the fridge for up to 4 days. Reheat in an air fryer at 375°F for 4 minutes to restore crispness.
