Ingredients
  

  • 1 whole-grain baguette sliced into 1/2 inch rounds
  • 2 ripe avocados
  • 1 cup cherry tomatoes quartered
  • 2 cloves garlic 1 minced, 1 halved for rubbing
  • 1 tbsp fresh lemon juice
  • 2 tbsp extra virgin olive oil
  • 1/4 cup fresh basil chopped
  • Salt and pepper to taste

Method
 

  1. Toast: Preheat oven to 400°F. Place bread on a tray, drizzle with oil, and bake for 5 minutes until golden.
  2. Garlic Rub: While warm, rub the halved garlic clove over each slice of bread.
  3. Smash: In a bowl, mash avocados with lemon juice, minced garlic, and olive oil.
  4. Fold: Gently stir in the tomatoes.
  5. Assemble: Spoon the mixture onto the bread. Top with basil, salt, and pepper.
