Method
- Preheat oven to 375°F (190°C). Grease a 9-inch pie dish with extra-virgin olive oil.
- Heat olive oil in a skillet over medium heat. Add diced onion and cook for 4-5 minutes until translucent. Add minced garlic and chopped spinach; cook for 1-2 minutes until wilted. Remove from heat and cool slightly.
- In a large bowl, whisk eggs and milk together until frothy. Stir in cottage cheese, crumbled feta, oregano, nutmeg, salt, and pepper.
- Fold the cooled spinach mixture and 1/4 cup of shredded mozzarella into the egg mixture until evenly distributed.
- Pour mixture into the greased pie dish. Top with remaining 1/4 cup shredded mozzarella.
- Bake for 30-35 minutes until the center is set and edges are golden brown.
- Allow to rest for 5-10 minutes before slicing into clean wedges. Serve warm or at room temperature.

- To use frozen spinach: Thaw 5 oz frozen spinach and squeeze out all moisture in a clean kitchen towel before adding.
