Spinach and Feta Chicken Rolls

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 tbsp extra virgin olive oil
  • 5 oz fresh spinach chopped
  • 1/2 cup feta cheese crumbled
  • 2 cloves garlic minced
  • 1 small onion finely chopped
  • 1/2 tsp dried oregano
  • Salt and black pepper to taste
Optional:
  • 1/4 cup chopped sun-dried tomatoes

Method
 

  1. Preheat: Oven to 375°F (190°C). Grease a baking dish.
  2. Sauté: In a skillet, sauté onion and garlic in olive oil. Add spinach until wilted. Let cool, then mix with feta.
  3. Prep: Butterfly the chicken breasts and season with salt, pepper, and oregano.
  4. Roll: Spread filling on chicken, roll tightly, and secure with toothpicks.
  5. Sear: Sear rolls in a skillet for 2-3 mins per side until golden.
  6. Bake: Place in dish and bake for 20-25 mins (internal temp 165°F).
  7. Rest: Let rest for 5 mins, remove toothpicks, and serve.

Notes

To ensure the chicken stays juicy, always use a meat thermometer to check for an internal temperature of 165°F (74°C). If using frozen spinach, be sure to squeeze out all excess moisture before mixing with the feta to prevent a watery filling.
