- Roll: Spread filling on chicken, roll tightly, and secure with toothpicks.
- Sear: Sear rolls in a skillet for 2-3 mins per side until golden.
- Bake: Place in dish and bake for 20-25 mins (internal temp 165°F).
- Rest: Let rest for 5 mins, remove toothpicks, and serve.
Notes
To ensure the chicken stays juicy, always use a meat thermometer to check for an internal temperature of 165°F (74°C). If using frozen spinach, be sure to squeeze out all excess moisture before mixing with the feta to prevent a watery filling.
