Spinach and Feta Puff Pastry Squares

Crispy, golden, and flaky Mediterranean appetizers inspired by traditional Spanakopita. These easy-to-make squares use frozen puff pastry for a buttery finish and a savory spinach-feta filling that is perfect for parties or snacks.

Ingredients
  

  • 1 box 2 sheets frozen puff pastry, thawed
  • 10 oz spinach fresh sautéed or frozen, squeezed very dry
  • 1 cup crumbled feta cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic minced
  • 2 green onions finely sliced
  • 1 tsp dried oregano or fresh dill
  • 1/2 tsp black pepper
  • 1 large egg for egg wash
  • 1 tbsp water
Optional:
  • Sesame seeds or extra herbs for garnish

Method
 

  1. Preheat: Set oven to 400°F (200°C). Line two large baking sheets with parchment paper.
  2. Mix Filling: In a bowl, combine dry spinach, feta, Parmesan, garlic, green onions, and oregano. Stir until well combined.
  3. Prepare Pastry: Roll out puff pastry sheets on a floured surface. Cut each sheet into 6 or 9 squares.
  4. Dock & Fill: Place squares on the baking sheets. Prick the centers with a fork. Place 1-2 tbsp of filling in the center of each.
  5. Wash & Top: Whisk the egg and water. Brush the pastry edges. Sprinkle with extra feta or sesame seeds.
  6. Bake: Bake for 15-20 minutes until the pastry is puffed and deep golden brown. Serve warm.
