Method
- Preheat: Set oven to 400°F (200°C). Line two large baking sheets with parchment paper.
- Mix Filling: In a bowl, combine dry spinach, feta, Parmesan, garlic, green onions, and oregano. Stir until well combined.
- Prepare Pastry: Roll out puff pastry sheets on a floured surface. Cut each sheet into 6 or 9 squares.
- Dock & Fill: Place squares on the baking sheets. Prick the centers with a fork. Place 1-2 tbsp of filling in the center of each.
- Wash & Top: Whisk the egg and water. Brush the pastry edges. Sprinkle with extra feta or sesame seeds.
- Bake: Bake for 15-20 minutes until the pastry is puffed and deep golden brown. Serve warm.
