Spinach, Tomato and Feta Crustless Quiche

Ingredients
  

Quiche Base & Filling:
  • - 8 large eggs room temperature
  • - 1/2 cup plain Greek yogurt full-fat
  • - 1/2 cup whole milk
  • - 5 oz fresh baby spinach roughly 4-5 packed cups
  • - 1 cup cherry tomatoes halved, divided
  • - 1 cup Greek feta cheese crumbled, divided
  • - 1 small yellow onion finely chopped
  • - 2 cloves garlic minced
  • - 1 tbsp extra virgin olive oil
  • - 1/2 tsp sea salt
  • - 1/4 tsp freshly cracked black pepper
  • - 1/8 tsp ground nutmeg
  • - 2 tbsp fresh flat-leaf parsley finely chopped, for garnish
Blistered Tomato Side & Drizzle:
  • - 1 cup whole cherry tomatoes
  • - 1 tsp extra virgin olive oil
  • - 1 tsp high-quality balsamic glaze

Method
 

  1. Preheat oven to 375°F (190°C). Generously grease a deep 9-inch pie dish or springform pan with olive oil or butter.
  2. Heat 1 tbsp olive oil in a skillet over medium heat. Sauté chopped onions for 3-4 minutes until translucent. Add minced garlic and cook for 1 minute until fragrant.
  3. Add fresh baby spinach to the skillet and toss for 2 minutes until fully wilted.
  4. Transfer spinach mixture to a fine-mesh strainer or paper towels and squeeze out all excess liquid thoroughly.
  5. In a large bowl, vigorously whisk together eggs, Greek yogurt, whole milk, sea salt, black pepper, and nutmeg until light, bubbly, and aerated (about 60-90 seconds).
  6. Spread squeezed spinach, half of the halved cherry tomatoes, and half of the crumbled feta across the bottom of the greased pan.
  7. Gently pour the egg custard over the fillings. Top with the remaining halved cherry tomatoes so they float near the surface.
  8. Bake for 40 to 45 minutes until the edges are golden brown and the center is set.
  9. Toss whole cherry tomatoes in 1 tsp olive oil with a pinch of salt/pepper. Roast on a small tray alongside quiche during the last 10 minutes of baking until blistered.
  10. Remove quiche from oven. Top immediately with remaining crumbled feta and fresh parsley.
  11. Rest for 10 minutes before slicing into 6 wedges. Serve each slice accompanied by blistered tomatoes and a drizzle of balsamic glaze.

Notes

- Moisture Control: Squeezing the liquid out of the spinach is essential to avoid a watery quiche.
- Reheating: Reheat slices in an air fryer or oven at 350°F for 5-7 minutes for best texture.
- Dairy-Free Swap: Use unsweetened almond milk and plant-based feta alternatives.
