Prep the Oven & Skillet:
- Preheat your oven to 400°F (200°C). Set a 10-inch oven-safe cast iron or heavy non-stick skillet on the stove.
Whisk Eggs:
- In a bowl, vigorously whisk the 8 eggs, 1/4 cup milk, 1/2 tsp kosher salt, and 1/4 tsp black pepper for 60 seconds until smooth and frothy.
Sauté Aromatics & Spinach:
- Heat 1 tbsp olive oil over medium heat in the skillet. Sauté 2 minced garlic cloves for 1 minute until fragrant. Add 4 cups baby spinach and cook for 2 minutes until just wilted.
Layer Fillings:
- Spread spinach across the bottom of the pan. Slowly pour the whisked egg mixture over the spinach. Scatter 1/2 cup chopped sun-dried tomatoes and 3 oz crumbled goat cheese evenly over top.
Set Edges:
- Cook undisturbed on the stovetop over medium heat for 2 minutes until bottom crust sets.
Bake:
- Transfer skillet to preheated oven and bake for 10 to 12 minutes until top is golden browned and center has a slight wobble.
Garnish & Serve:
- Let rest for 5 minutes. Garnish with fresh microgreens or herbs, slice into wedges, and serve warm.
