Ingredients

For the Roasted Base:
  • - 2 medium sweet potatoes peeled and cut into 1-inch cubes
  • - 2 cups butternut squash peeled and cut into 1-inch cubes
  • - 2 medium baking apples like Honeycrisp or Fuji, cored and diced
  • - 3 tbsp extra virgin olive oil divided
  • - 2 tbsp butter
  • - 1 tsp ground cinnamon
  • - 1/2 tsp garlic powder
  • - Salt and black pepper to taste
For the Toppings & Drizzle:
  • - 8 oz Brie cheese rind removed (or left on) and cut into small pieces
  • - 1/3 cup pecans lightly chopped and toasted
  • - 2 tbsp honey
  • - 1/2 tsp red pepper flakes
  • - 1 tsp fresh thyme leaves
  • - 1 tbsp fresh lemon juice

Method

  1. Preheat oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper.
  2. In a large bowl, toss cubed sweet potatoes and butternut squash with 2 tbsp olive oil, garlic powder, salt, and pepper. Spread on baking sheet and roast for 20-25 minutes until tender.
  3. In a skillet over medium heat, melt butter and 1 tbsp olive oil. Add diced apples, cinnamon, and lemon juice. Sauté for 5-7 minutes until caramelized.
  4. Transfer roasted vegetables to a baking dish or cast-iron skillet. Coarsely smash with a fork or potato masher for a rustic texture.
  5. Fold in caramelized apples and nestle Brie cheese pieces evenly across the top.
  6. Return to oven for 5-8 minutes until Brie is soft and melted.
  7. Warm honey and red pepper flakes in microwave for 10-15 seconds.
  8. Garnish smash with toasted pecans, fresh thyme, and hot honey drizzle. Serve warm.

Notes

- Can be prepped 24 hours in advance by chopping vegetables ahead.
- Replace Brie with vegan mozzarella for a dairy-free option.
